Slow Cooked Creamy Fish Chowder

INGREDIENTS:
1 can evaporated milk
1/4 kilogram halibut, sliced into bite-size pieces
4 slices bacon, chopped
2 large carrots, diced
2 large potatoes, diced
3 stalks celery, diced
1 onion, chopped
2 cloves garlic, minced
6 cups chicken stock
1 cup shrimp, peeled and deveined
1 cup scallops
1 cup fresh corn kernels
1/2 teaspoon red pepper flakes
Ground black pepper to taste

METHOD:
In a pan, cook bacon for 6 to 8 minutes or until browned. Stir in onion and garlic and cook until tender. Transfer bacon mixture into a crock pot. Add chicken stock, carrots, potatoes, celery and corn. Cover and cook for 3 hours on high. Add shrimp, scallops and halibut to the pot and cook for 1 hour more. When ready, stir in evaporated milk and heat through before serving.

Crock Pot Tuna and Beans

INGREDIENTS:
1 kilogram white beans, soaked overnight and drained
2 cans white tuna in water, drained and flaked
1 clove garlic, crushed
2 sprigs basil, finely chopped
6 cups water
2 cups chopped tomatoes
4 tablespoons olive oil
Salt and ground black pepper to taste

METHOD:
Heat olive oil in a skillet and cook garlic for 1 minute. Discard garlic then place beans in the oil, stirring to coat. Transfer to a slow cooker. Add the water, cover and cook for 1 hour on high. Reduce heat to low and cook for 4 to 6 hours more. Add the tuna, basil and tomatoes then season with salt and pepper.
