|Kofta with mashed potatoes|
1 kilo minced meat (Lamb or beef or mixed)
Salt and Pepper
1/2 kilo mashed potatoes
1/2 cup boiled peas
1/2 cup boiled carrots
2 tbsp minced parsley
½ cup grated cheese
1 tbsp margarine
pinch of nutmeg
In a bowl, mix well meat, onion, salt, pepper, Rusk crumbs and nutmeg.
Make balls from the mixture leaving small hall in each ball in order to place the potato balls.
Put meatballs on a baking tray and bake at a temperature of 200ºC for 25 minutes.
In the meantime, heat the margarine in a medium sized non-stick frypan over medium heat. Sauté the onions with salt and pepper. Add peas and carrots then stir well.
Remove mixture from heat then add parsley, mashed potatoes then mix. Form mixture into balls then place each ball on a kofta ball.
