Mini Dried Mixed Fruits Bread
I saw this recipe from Ann, Anncoo Journal and I feel in love with
it straight away because my husband and I love to eat mixed fruits.
Thanks to Ann for sharing this recipe, now I have another great
recipe for my husband to savour.  Too bad he cannot taste it today
because he is now in Hong Kong.  Pity him, these past two weeks,
he has no rest at all.  He touched down KL from Guangzhou, China
on Wednesday at 1.00 am and then on the same day at 8.00 am flying off to
Miri, Sarawak for one night stay.  Came back to KL again on Thursday
very late night.  On Friday morning, rush to Bentong, Pahang for day
trip.  Yesterday at 8.00 am, flying off to Hong Kong for one day and
then hop over to Guangzhou, China and he will be back to KL this
coming Thursday and then following week, back to square one.
Heizzz, really pity him.  But what to do, making a living and giving us
the best of everything [this is what he texted to me].  Yeah! it is true,
he always give our kids and myself the best of everything.  That is why
all of us love him so much for loving and caring for us so much.
  When my husband is back, will definitely bake this again for him.
I double the ingredients and make 15 pieces and I have changed
some of the ingredients.  Do hop over to Ann, Anncoo Journal for
her original recipe.
Ingredients A :-
500g Dried Mixed Fruits.
40g Caster Sugar.
1 teaspoon Salt.  /  1 teaspoon Cinnamon Power
100g Honey.  /  60g Vegetable Oil.
500 ml Orange Juice.
Ingredients B :-
400g Bread Flour. / 2 teaspoons Baking Powder. / 1 teaspoon Baking Soda.
In a pot, mix together all ingredients A.
Boil over medium fire.  Once boil, lower to low fire and boil further
another 5 minutes and turn off the fire.
Let the mixture cool at one side.
Then pour in the shifted ingredients B and mix thoroughly or well combined.
With ice ceam scoop, scoop the batter into the paper liner until 3/4 full.
Scatter on top of the batter with pumpkin and sunflower seed.
Bake at 190 Degree Celcius at around 25 minutes or

until skewer comes out clean.

Take it out and let it cool for 10 minutes and transfer to wire rack to cool further.
I love it and I am sure my husband will love it also.
Those do not like moist bread, won’t like it.
I given some to my daughter to bring to college for her college friends since
she is attending Moot rehearsal today.  Comments are “nice and lovely mini bread”.
Maybe, they are being polite……hahaha.  Anyway, just give it a try.
