Homemade Phyllo aka Filo Dough – One Step Away from Baklava

Makes enough for about twenty (10 to 12 inch round) sheets of filo:
2 cups all-purpose flour, plus more for kneading
5 teaspoons olive oil
1/2 teaspoon fine salt
2 teaspoons white wine vinegar
3/4 cups warm water (about 110 F.)
For the starch mixture:
1/2 cup cornstarch
2 tablespoons all-purpose flour
